Gluten-Free Banana Bread
Tip:
Try to make muffins if you’d like! This bread is a great crowd-pleaser, especially to have on the counter during holidays, when lazy mornings often consist of coffee, spending time together, and an easy breakfast.

Gluten-Free Banana Bread
2 c. Gluten-Free Trader Joe’s All-Purpose Flour
1/2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1/2 c. sugar
1/2 c. brown sugar
1/2 c. butter
2 eggs
1 tsp. vanilla
3 medium sized bananas, mashed (about 1 c.)
5 Tbsp. buttermilk
DIRECTIONS:
Preheat oven to 350F. Grease a loaf tin.
Sift together flour, baking soda, baking powder, salt, and cinnamon. Set aside.
In a large bowl, cream together both sugars and the butter. Beat in the eggs, then mashed banana.
Mix in sifted dry ingredients until just combined.
Stir in buttermilk, scraping all the dough together in a bowl with a spatula. Spread into pan and bake for approximately 50-60 minutes, or until a knife inserted in the center comes out clean.
Notes:
You can certainly use all-purpose flour instead of GF. However, I have made it both ways and actually prefer the gluten-free version.
